With all the running around errands we had on Saturday, I got a late start on dinner. Ugh!! Not happy about that but, thank goodness I had placed the frozen cod in the refer that morning to slow thaw!
Once settled in, my gal served up a great glass of Pinot Grigio from Luna Vineyards in Italy. Not too tart and not too sweet, a perfect pairing with lemony cod! I would recommend buying it if you find it! I put on some chill out jazz with Ebbing Tides. The music and the wine cut the edge off the day and slid me perfectly into evening meal prep.......
If you are ever short on time like a midweek meal, this dinner comes together in about 15-20 minutes and according to my gal is an A++ meal. Recipe below is worth trying out!
