My gal said she was taking a break and that I would have to take over posting about my own dinners! It won't be the same and probably her devoted readers who like her humorous perspective on things may not like it, but I'll see what I can do.


Tonight's dinner was Almond Crusted Cod with Orange Sauce and topped with Baby Arugula.


The almond crust is made by quick pulsing almond slices and then mixing with panko and grated parmesan to form a crunchy, nutty crust. Topping this nutty flavor with a buttery orange sauce makes each bite a taste you just have to experience it yourself. Both times I have served this to my gal, she stops talking and starts saying hmm..hmmm....hmmm!

I told my guy I wanted another of his small plate dinners. Something new (aren't I the princess? lol). Something that would go with a light white wine..........Well, he did just that! He said I was acting a little like Ginger (who is that? Spice Girls?)  I don't know, should I ask? Anyway, he said it was what made him think of this dish.


So he was inspired to make me chicken tenders marinated in ginger and garlic, then stir fried with broccolini and carrots and then topped in the serving bowls with a ginger and lime broth. Wow! Oh and the wine? It's a favorite "House White", Muirwood Sauvignon Blanc. Brian Simpson on keyboards set a nice relaxing evening.

He said his secret ingredient was substituting soy sauce with coconut aminos sauce in the stir fry sauce. I absolutely loved the change!! It provides a less salty, smoother taste than soy and was a perfect call for this dish!

My guy told me earlier today he was going to make me Chicken Madeira, which I love 💕, but tonight when I got home, he said plans changed because he didn’t have Madeira wine and wanted to create something new. 


“Ok?” I said. I had my heart set on Chicken Medeira, but what am I going to say? 

He told me he used Tawny Port instead of Madeira and then added diced pancetta and cooked everything differently. Again, the food critic in me was skeptical, but this meal!!


It rocked with incredible flavor!  


The pancetta in this sauce gave it a slightly smoky, crunchy bite. I paired this dinner with an Italian Sangiovese wine, Villa Di Mare, which went really well with the port and smoky, pancetta-infused sauce. I would give it my Buy It, If You Can Find It recommendation!

Chicken & Pancetta with Tawny Port Reduction Sauce, Mushrooms & Asparagus Mashed Potatoes. He calls it Frango ao Porto. Whatever!


In my opinion, Tawny Port makes an incredible sauce! So much better than Madeira wine!
